Grenache noir 50%, Cinsault 45%, Syrah 5%
The berries are pressed gently with pneumatic presses. The grape juice is racked before fermentation starts. Temperatures are maintained at 18°C throughout the fermentation, which lasts from 10 to 14 days. Once it is completed, the wines are racked gross lees and refrigerated, for blocking the malolactic fermentation and obtaining a more efficient clarification.
The ideal temperature to be served: 5° to 7°C.
Aromatic, frank and fruity. Flavours of fresh sherries with peach on final. Lively and fleshy. Lightly �acidulous with a hint of citrus and cherry.
To drink in the year.
As an aperitive with little vegetables and provencal custards or with sausage and meatpies. It perfectly suits seafood dishes, mediterranean or exotic ones and asiatic meals.
